Wow! Cooking.com wants to include this photo in their 2011 newsletter so I guess I’d better provide some useful info. Here are some of the things I’ve learned over the years:
1. Cheap ham looks best. The more marbled the meat, the nicer the effect. Ask the deli to slice it thin, but not so thin that it’s shredded. (The meat used in this photo wasn’t very marbled and was a tad thicker than optimal.)
2. I like to use a cheap Styrofoam skull with one layer of lunch meat. Because the skull isn’t rated as foodsafe, guests do not eat the meat directly off the skull. They don’t seem to mind. 🙂 I suppose it would be possible to add all the meat to the skull and just peel off the outer layers, but I think you would lose the skull effect and it would just end up looking like a ball of meat with a couple of olives stuck in it.
3. I whip a brick of cream cheese in the blender and used it to “glue” the meat to the head. In the past, I’ve tried tinting the cream cheese a nice bloody red. It turned out to be a hot-pink mistake. Plain old white cream cheese is the best way to go. It is a messy process and another reason why I like using a disposable Styrofoam skull v/s a more expensive reusable plastic one. Don’t worry if you end up with excess cream cheese oozing out on top of the meat, you can gently wipe or dab off the excess with a damp paper towel when you’re done covering the skull.
4. Fill in the small nooks and crannies with little bits of ham first. Then cover the whole thing with larger slices.
5. Add a couple of extra-large olives to the eye sockets and you’re good to go.
For presentation purposes, it’s nice to have a little space between your skull and the ham you’re going to eat or they blend together (like it did in this photo). In previous years we included turkey and roast beef as “spacers” between the ham and the skull for best effect.
